Ingredients

  • 24 large shrimp- cleaned and deveined
  • 4 fresh peaches
  • 1 can coconut milk
  • Juice of 1 lime
  • 12 green onions
  • 6 tbsp sesame seeds
  • 1/2 cup crushed peanuts
  • 1 tbsp red pepper flakes
  • 1 tbsp cumin
  • 1 tsp cinnamin
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 3 tbsp brown sugar
  • freshly ground pepper & salt to taste
  • 1/4 cup cleaned fresh cilantro leaves
  • 1 lb fresh cleaned spinach
  • Olive Oil for grilling

Method

  • Prepare a hot grill.
  • Simmer cocount milk, lime juice and 6 sliced green onions (both green and white part)stirring occasionally.
  • Skewer shrimp- brush with oil.
  • Remove pit and cut peaches into large pieces; skewer- brush with oil.
  • Toast peanuts in a dry pan.
  • Toast sesame seeds in a dry pan.
  • Blend peanuts, sesame seeds, red pepper flakes, cumin, cinnamin, turmeric, salt & pepper and brown sugar in a large bowl. Set aside.
  • Place shrimp and peach skewers on grill- place last 6 whole green onions on grill. Turning until shrimp had firmed and pinked up, peaches have softened and caramelized and green onions have blackened in some places.
  • Toss cooked shrimp with blended dried ingredients in large bowl.
  • Add coconut milk mixture from stove to large bowl and stir gently until shrimp is well coated and dry spices have blended throughout gravy.
  • On a large platter, layer spinach, shrimp & gravy, fresh cilantro and grilled green onions. Place grilled peaches around the border of the platter and serve.
