Ingredients

  • 5 c. sifted flour
  • 3 c. whole wheat flour
  • 3/4 tsp. salt
  • 1/4 cake household yeast
  • 3/4 c. lukewarm water
  • 1 tsp. white sugar
  • 2 1/2 c. lukewarm water

Method

  • Place flours
  • and
  • salt
  • in
  • a large bowl and mix well. Add yeast, dissolved in 3/4 cup lukewarm water; add sugar, mix well and blend in remaining water.
  • Turn out on floured board. Knead until dough
  • is
  • smooth
  • and shiny.
  • Brush top and sides with shortening and
  • place
  • in greased bowl.
  • Let rise until double in bulk,
  • about
  • 1 hour.
  • Punch down;
  • knead again and return to bowl.
  • Let rise
  • 1/2
  • hour.
  • Shape
  • into
  • 2 loaves. Place in well-greased
  • pans and let rise until double in bulk. Bake 40 minutes or until well browned in 375° oven.
