Ingredients

  • 1/2 c. (1 stick) butter
  • 3/4 c. firmly packed brown sugar
  • 2 Large eggs
  • 2 1/4 c. whole wheat flour
  • 2 1/2 teaspoon baking pwdr
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 c. raisins
  • 1/2 c. minced peanuts
  • 1 1/4 c. applesauce

Method

  • Preheat oven to 350 degrees.
  • Cream butter and sugar till light and fluffy.
  • Add in Large eggs; mix well.
  • Combine flour, baking pwdr, salt, soda, spices, raisins and nuts.
  • Add in to creamed mix alternately with applesauce; mix well after each addition.
  • Spoon batter into well buttered 9x5 inch loaf pan.
  • Bake 60 to 70 min or possibly till wooden pick inserted in center comes out clean.
  • Cold 10 min; remove from pan and cold completely on wire rack.
  • Wrap tightly in plastic wrap and store 12 to 24 hrs.
