Ingredients

  • 1 whole fryer cut up 8/10 pieces
  • 1 whole lemon w/skin washed and cut into chunks
  • 1 whole bulb of garlic(small/med) peeled and smashed
  • 1 tblspn cracked black pepper
  • 2 tblspn whole rosemary leaves
  • 1 tspn seasoned salt
  • olive oil to coat (1/4 cup)

Method

  • after chicken is cut up,washed and dried put the pieces into a bowl. Put everything else on top. Squeeze lemon chunks over chicken and add (discarding pits). Add pepper, rosemary, seasoned salt. Drizzle olive oil and stir well so all the pieces are coated . Pour everything into roasting pan and broil or roast till juices run clear. You'll be eating the roasted lemon chunks!
