Ingredients

  • 1 Tbsp. vegetable oil
  • 6 boneless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 can S & W medium ready cut salsa
  • 3 cans S & W small white beans
  • 3 tsp. mesquite cooking sauce
  • 1/3 c. cilantro, chopped
  • grated Monterey Jack cheese

Method

  • Cut chicken in 1/2-inch chunks and saute in oil over medium heat.
  • Add garlic and onion and stir until chicken is lightly browned.
  • Add salsa, beans, cooking sauce and cilantro.
  • Simmer 20 to 25 minutes.
  • Top with cheese and additional cilantro if desired.
