- 1 Tbsp. vegetable oil
- 6 boneless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 can S & W medium ready cut salsa
- 3 cans S & W small white beans
- 3 tsp. mesquite cooking sauce
- 1/3 c. cilantro, chopped
- grated Monterey Jack cheese
Method
- Cut chicken in 1/2-inch chunks and saute in oil over medium heat.
- Add garlic and onion and stir until chicken is lightly browned.
- Add salsa, beans, cooking sauce and cilantro.
- Simmer 20 to 25 minutes.
- Top with cheese and additional cilantro if desired.
