Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 tsp. ground cumin
  • 2 whole, large chicken breasts, skinned, boned and cut into 1-inch chunks
  • 1 (15 oz.) can white kidney beans
  • 1 (15 oz.) can garbanzo beans, drained
  • 1 (12 oz.) can white corn, drained
  • 1 (4 oz.) can chopped green chilies
  • 2 chicken-flavored bouillon cubes or envelopes
  • hot pepper sauce
  • 1/4 lb. Monterey Jack cheese, shredded

Method

  • Cook and prepare chicken.
  • Mix all ingredients in a large pot or crock-pot except the hot pepper sauce and cheese.
  • Cook for about an hour or so.
  • If using crock-pot, let cook on low all day. May have to add a little water.
  • When serving, add hot pepper sauce to taste and garnish with shredded cheese.
  • Makes about 8 main dish servings.
