- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 tsp. ground cumin
- 2 whole, large chicken breasts, skinned, boned and cut into 1-inch chunks
- 1 (15 oz.) can white kidney beans
- 1 (15 oz.) can garbanzo beans, drained
- 1 (12 oz.) can white corn, drained
- 1 (4 oz.) can chopped green chilies
- 2 chicken-flavored bouillon cubes or envelopes
- hot pepper sauce
- 1/4 lb. Monterey Jack cheese, shredded
Method
- Cook and prepare chicken.
- Mix all ingredients in a large pot or crock-pot except the hot pepper sauce and cheese.
- Cook for about an hour or so.
- If using crock-pot, let cook on low all day. May have to add a little water.
- When serving, add hot pepper sauce to taste and garnish with shredded cheese.
- Makes about 8 main dish servings.
