Ingredients

  • 1 tablespoon butter
  • 2 tablespoons chopped onion
  • 1 tablespoon flour
  • 1 cup milk
  • Salt, pepper, and nutmeg

Method

  • Melt the butter in a heavy saucepan over medium heat.
  • Add the onion and flour, and cook for 3 minutes, stirring constantly.
  • Warm the milk in another pot (to avoid lumps later).
  • Stir the corn into the onion mixture and then add the milk.
  • Warm the mixture thoroughly, but do not boil.
  • Season to taste with salt and pepper.
  • Serve with a tiny sprinkling of nutmeg.
