Ingredients

  • 2 gallons cold water
  • 3 cups apple juice
  • 1 cup brown sugar
  • 1 cup kosher salt
  • 1 orange, peeled
  • 1/4 cup chopped fresh rosemary
  • 2 tablespoons whole black peppercorns
  • 1 1/2 tablespoons minced garlic
  • 1 1/2 teaspoons whole allspice berries
  • 1 1/2 teaspoons chopped crystallized ginger
  • 5 bay leaves

Method

  • Combine water, apple juice, brown sugar, kosher salt, orange peel, rosemary, peppercorns, garlic, allspice, ginger, and bay leaves in a stock pot; bring to a gentle boil. Remove from heat and cool to room temperature.
