Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. oil
  • 1 clove garlic
  • 1 tsp. salt
  • 1 large onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 tsp. chili powder
  • 1 (1 lb.) can tomatoes
  • 1 (1 lb.) can kidney beans
  • 3/4 c. uncooked rice
  • 1 c. chopped olives
  • 3/4 c. shredded cheese

Method

  • Brown hamburger in oil.
  • Drain off fat drippings.
  • Saute vegetables 5 minutes or until soft.
  • Add the rest of the ingredients except the olives and cheese.
  • Bake in a greased 2-quart casserole, uncovered, at 350° for 45 minutes.
  • Sprinkle with olives and cheese and bake 15 minutes more.
  • Allow 1/2 hour for reheating.
