Ingredients

  • 4 bacon slices, diced
  • 1 large onion, chopped
  • 1/3 c. dry lentils
  • 1 1/3 c. water
  • 2 Tbsp. catsup
  • 1tsp. garlic powder
  • 3/4 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. dried red pepper flakes
  • 1 bay leaf
  • 15 oz. can pinto beans, drained
  • 16 oz. can kidney beans, drained

Method

  • Lightly fry bacon in a heavy 3-quart saucepan.
  • Add onion; cook until transparent.
  • Stir in remaining ingredients.
  • Cook over medium heat for 45 minutes or until lentils are tender, stirring once or twice.
  • Remove bay leaf before serving.
  • Serves 8 to 10.
