- 1 Fillet of salmon
- 1/3 cup Coconut Oil
- 5 Shallots
- 1 clove Garlic
- 1 Red Pepper
- 1 Handful of fresh dill
- 3 tbsp Fresh parsley
- 1 Zest of 1 lemon
- 1 Juice of 1 lemon
- 2/3 cup White wine
- 1/2 cup chicken broth
- 1/3 cup Heavy cream
- 1/2 tsp Fresh Cracked pepper
- 1/2 tsp salt
Method
- Dice shallots, garlic and red pepper.
- Heat oil in heavy pan.
- Season both sides of salmon with salt and pepper.
- Crisp salmon on medium high heat for 3 minutes a side.
- Add in Shallots, garlic, red pepper, dill, parsley and lemon zest.
- Season with pepper.
- Cook for another 3 minutes.
- Add wine, chicken broth and lemon juice.
- Reduce.
- Add cream and cook until thick.
- Few minutes.
- Serve over pasta or eat as is.
