Ingredients

  • 1 Fillet of salmon
  • 1/3 cup Coconut Oil
  • 5 Shallots
  • 1 clove Garlic
  • 1 Red Pepper
  • 1 Handful of fresh dill
  • 3 tbsp Fresh parsley
  • 1 Zest of 1 lemon
  • 1 Juice of 1 lemon
  • 2/3 cup White wine
  • 1/2 cup chicken broth
  • 1/3 cup Heavy cream
  • 1/2 tsp Fresh Cracked pepper
  • 1/2 tsp salt

Method

  • Dice shallots, garlic and red pepper.
  • Heat oil in heavy pan.
  • Season both sides of salmon with salt and pepper.
  • Crisp salmon on medium high heat for 3 minutes a side.
  • Add in Shallots, garlic, red pepper, dill, parsley and lemon zest.
  • Season with pepper.
  • Cook for another 3 minutes.
  • Add wine, chicken broth and lemon juice.
  • Reduce.
  • Add cream and cook until thick.
  • Few minutes.
  • Serve over pasta or eat as is.
