Ingredients
- 7 lb. watermelon rind
- 7 c. sugar
- 2 c. vinegar
- 1/4 tsp. oil of cloves
- 1/4 tsp. cinnamon
Method
- Trim off dark green and pink parts of watermelon rind.
- Cut 1-inch or any shape desired.
- Soak in lime water (1 tablespoon slacked lime to each quart of water) for 4 hours.
- Drain and rinse. Cover with cold water and cook until tender but not soft. Drain. Combine sugar, vinegar, cinnamon and cloves.
- Bring to boiling point.
- Pour over rind and let stand overnight.
