Ingredients

  • 7 lb. watermelon rind
  • 7 c. sugar
  • 2 c. vinegar
  • 1/4 tsp. oil of cloves
  • 1/4 tsp. cinnamon

Method

  • Trim off dark green and pink parts of watermelon rind.
  • Cut 1-inch or any shape desired.
  • Soak in lime water (1 tablespoon slacked lime to each quart of water) for 4 hours.
  • Drain and rinse. Cover with cold water and cook until tender but not soft. Drain. Combine sugar, vinegar, cinnamon and cloves.
  • Bring to boiling point.
  • Pour over rind and let stand overnight.
