Ingredients
- 3 qt. prepared watermelon rinds
- 7 c. sugar
- 2 c. white vinegar
- 1/2 tsp. oil of cloves
- 1/2 tsp. oil of cinnamon
Method
- To prepare watermelon rinds, you will need to remove all pink fruit and dark green peel. Cut into bite size pieces.
- Cover the rinds with water and boil for 10 minutes. Drain.
- Combine sugar, vinegar and spices in a saucepan. Boil.
- Pour over rinds and let stand overnight.
