Ingredients

  • 1 rice bowl's worth Freshly cooked rice
  • 2 heaping tablespoons Green onions (finely chopped)
  • 2 tbsp Tempura crumbs
  • 1 dash Mentsuyu
  • 1 pinch Bonito flakes
  • 1 Sesame salt
  • 1 dash to adjust the texture of the rice, if necessary Hot water
  • 1 dash Wasabi
  • 2 tsp Grated cheese
  • 1 Matcha

Method

  • Cut the green onions into small pieces.
  • Soak the tempura crumbs in a bit of mentsuyu.
  • If using a concentrated type, dilute it with water.
  • Mix together the fresh rice, tempura crumbs, bonito flakes, and sesame salt in a bowl.
  • Mix in the green onions and season to taste with the sesame salt and mentsuyu.
  • Mix in the wasabi and powdered cheese.
  • Roll into your desired shapes.
  • I made round onigiri.
  • Arrange on a plate to finish.
  • I garnished them with matcha.
