Ingredients
- 1 lb frozen potato chunks
- 1 tbsp vegetable or olive oil
- 3 slices bacon, chopped
- 1/2 None small red onion, thinly sliced
- 2 tbsp dijon mustard and mayonnaise mix
- 2 tbsp sun-dried tomatoes in oil, drained and halved
- 2 oz baby spinach
- 1 tbsp fresh chives, chopped
Method
- Preheat oven to 425°F. Line a baking tray with parchment paper. Place potatoes on prepared tray, drizzle with 1/2 tbsp oil and toss to coat. Season with salt and bake, for 25 mins or until golden.
- Meanwhile, heat remaining oil in a frying pan over medium heat. Add bacon and cook for 5 mins or until golden and crisp. Add onion and cook for 2-3 mins or until just tender. Remove from heat. Toss with potatoes and remaining ingredients. Serve.
