Ingredients
- 2/3 cup French green lentils
- 1 lb baby green beans, trimmed
- 2 None tomatoes, seeded and chopped
- 2 tbsp finely chopped fresh chives
- None None FOR THE VINAIGRETTE
- 1 None shallot, finely chopped
- 1 tbsp Dijon mustard
- 2 tbsp white wine vinegar
- 2 tbsp olive oil
Method
- Cook lentils, uncovered, in medium saucepan of boiling water for 15 mins or until just tender; drain.
- Meanwhile, for the vinaigrette, whisk shallot, mustard and vinegar in small bowl. Gradually add oil, whisking to combine.
- Boil, steam or microwave green beans until just tender; drain.
- Place lentils, green beans, tomato and chives in a large bowl. Drizzle with vinaigrette; toss gently to combine.
