Ingredients

  • 2/3 cup French green lentils
  • 1 lb baby green beans, trimmed
  • 2 None tomatoes, seeded and chopped
  • 2 tbsp finely chopped fresh chives
  • None None FOR THE VINAIGRETTE
  • 1 None shallot, finely chopped
  • 1 tbsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil

Method

  • Cook lentils, uncovered, in medium saucepan of boiling water for 15 mins or until just tender; drain.
  • Meanwhile, for the vinaigrette, whisk shallot, mustard and vinegar in small bowl. Gradually add oil, whisking to combine.
  • Boil, steam or microwave green beans until just tender; drain.
  • Place lentils, green beans, tomato and chives in a large bowl. Drizzle with vinaigrette; toss gently to combine.
