Ingredients
- 2 c. all-purpose flour
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt (optional)
- 1 1/2 tsp. nutmeg
- 2 eggs, separated
- 1 3/4 c. milk
- 6 Tbsp. vegetable oil or melted butter
Method
- Preheat waffle iron according to manufacturer's directions. Mix flour, sugar, baking powder, nutmeg and salt into a bowl. Combine egg yolks, milk and oil.
- Pour into flour mixture and beat with a rotary beater or electric mixer just until smooth.
- Beat egg whites until soft peaks form and fold into batter.
- Pour batter into greased waffle iron and bake as manufacturer directs. Serve with butter, maple syrup or fruit topping.
