Ingredients

  • 2 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt (optional)
  • 1 1/2 tsp. nutmeg
  • 2 eggs, separated
  • 1 3/4 c. milk
  • 6 Tbsp. vegetable oil or melted butter

Method

  • Preheat waffle iron according to manufacturer's directions. Mix flour, sugar, baking powder, nutmeg and salt into a bowl. Combine egg yolks, milk and oil.
  • Pour into flour mixture and beat with a rotary beater or electric mixer just until smooth.
  • Beat egg whites until soft peaks form and fold into batter.
  • Pour batter into greased waffle iron and bake as manufacturer directs. Serve with butter, maple syrup or fruit topping.
