Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic cloves minced
  • 1 yellow onion medium, chopped
  • 1 cup vodka
  • 1 cup reduced sodium chicken broth
  • 32 ounces crushed tomatoes
  • 1/2 cup heavy cream
  • 1 box penne rigate
  • salt
  • pepper

Method

  • Heat the oil and butter over a medium heat in the sauce pan. Add the onion and garlic and allow to saute for 3-5 minutes.
  • Add the vodka and allow to cook down for about 3 minutes. Then, add chicken stock, tomatoes and cream. Allow it bubble then reduce to simmer. Season with salt and pepper.
  • Add water to pot and bring to a boil. When boiling add pasta and allow to cook according to the box's directions.
  • Right before the pasta is done take the sauce off the heat.
  • Strain your pasta and add the sauce directly into the pot of penne and allow it set for a couple of minutes. Then you are ready to serve and enjoy!
