Ingredients

  • 1 tablespoon olive oil
  • 2 shallots finely sliced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon brown sugar
  • 8 3/4 ounces turkey meat cooked, finely shredded
  • 1 lime juice
  • 1 pound tortillas
  • salsa Avocado
  • 3/4 cup corn kernels canned, drained
  • 1 avocado pitted, peeled, chopped
  • 1 lime peeled, flesh finely chopped
  • 1 red chili small, finely chopped
  • arugula wild, to serve

Method

  • Heat oil in a medium frying pan over high heat. Saute shallots for 1-2 mins, until tender. Add oregano, cinnamon, coriander and brown sugar. Cook for 30 seconds, until sticky and fragrant. Add turkey meat. Cook, stirring, until warmed through. Remove pan from heat. Add lime juice. Season. Let cool slightly.
  • Meanwhile, to make the avocado salsa, in a small bowl, combine corn, avocado, lime and chili. Season.
  • Heat a grill pan over high heat. Brush tortillas with oil then grill for 30 seconds per side, until golden. Top with turkey, salsa and baby arugula. Serve.
