Ingredients

  • 1/2 cup milk
  • 2 eggs
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 8 slices whole-grain bread
  • 1 pint strawberries sliced
  • 1 pint blueberries or raspberries
  • 2 tablespoons sliced almonds toasted
  • maple syrup to serve

Method

  • Whisk milk, eggs, sugar and vanilla extract in a shallow bowl. Dip bread slices in mixture, turning to coat. Let stand 1 min to absorb.
  • Spray a large skillet with no stick cooking spray and heat on medium. Lift bread slices from egg mixture with a slotted spatula, letting excess drain off. Cook in batches for 2 mins each side, until puffed and golden. Transfer to heated plates.
  • Top French toast with berries and sprinkle with almonds. Drizzle with maple syrup to serve.
