Ingredients
- 1/2 cup milk
- 2 eggs
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 8 slices whole-grain bread
- 1 pint strawberries sliced
- 1 pint blueberries or raspberries
- 2 tablespoons sliced almonds toasted
- maple syrup to serve
Method
- Whisk milk, eggs, sugar and vanilla extract in a shallow bowl. Dip bread slices in mixture, turning to coat. Let stand 1 min to absorb.
- Spray a large skillet with no stick cooking spray and heat on medium. Lift bread slices from egg mixture with a slotted spatula, letting excess drain off. Cook in batches for 2 mins each side, until puffed and golden. Transfer to heated plates.
- Top French toast with berries and sprinkle with almonds. Drizzle with maple syrup to serve.
