Ingredients

  • 2 tbsp butter
  • 1 medium Vidalia onion
  • 1 pinch cayenne pepper
  • 1 cup milk
  • 2 eggs
  • 2 cup extra sharp cheddar cheese, shredded, plus more for top
  • 4 cup cooked rice
  • 1 tsp fresh thyme, chopped
  • 1 tsp basil, chopped
  • 1 tsp fresh parsley choppef
  • 1 salt & freshly ground pepper to taste
  • 1 packages spinach, thawed, drained,

Method

  • Preheat oven to 350F.
  • Butter a large casserole dish.
  • In a large pan over medium/high heat, saute onions with 2 tablespoons butter and cayenne until translucent.
  • Add spinach and cook for 3 minutes.
  • Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture.
  • Combine well and season with salt and pepper.
