Ingredients

  • 4 potatoes
  • 1 block butter
  • 3 shallots
  • Coffee Rich
  • salt and pepper to taste

Method

  • Peel potatoes and slice thin.
  • Put in a saucepan with butter and chopped shallots. Add enough water to cover.
  • Cook 1 hour over low heat.
  • When cool, blend in blender.
  • Add enough Coffee Rich to make soup as thick or thin as you want it. Add salt and pepper to your taste. This soup is served cold, but I prefer to heat it.
