Ingredients
- 4 potatoes
- 1 block butter
- 3 shallots
- Coffee Rich
- salt and pepper to taste
Method
- Peel potatoes and slice thin.
- Put in a saucepan with butter and chopped shallots. Add enough water to cover.
- Cook 1 hour over low heat.
- When cool, blend in blender.
- Add enough Coffee Rich to make soup as thick or thin as you want it. Add salt and pepper to your taste. This soup is served cold, but I prefer to heat it.
