Ingredients

  • 1/2 cube bouillon cube
  • (Knorr tomato bouillon with chicken flavor)
  • 4 c. water
  • 1/4 teaspoon salt
  • 1 tbsp. vegetable oil
  • 1 lg. carrot
  • 2 med. potatoes
  • 1 med. zucchini squash

Method

  • Peel and dice carrot and potatoes, dice squash.
  • Saute/fry in vegetable oil.
  • Bring water and salt to a boil, reduce heat and add in vegetables; add in bouillon cube and simmer till vegetables are still crisp but done.
  • When serving soup, serve with a slice of lemon.
  • Squeeze lemon into soup to taste.
  • This adds flavor and zest.
