Ingredients

  • (for the loaves)
  • 2 pounds Ground Venison
  • 1 pound Ground Beef
  • 1 1/2 cups breadcrumbs
  • 2 large eggs
  • 1 large Red Onion, chopped
  • 2 Jalapeno Peppers, chopped
  • 4 Garlic cloves, chopped
  • 1/2 cup Cilantro, chopped
  • 3 Tbsp olive oil
  • 2 Tbsp butter
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • (for the glaze)
  • 1 cup ketchup
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp honey
  • 2 Tbsp grated ginger

Method

  • 1) Preheat oven to 350 degrees.
  • 2) Saute onion, jalapeno peppers, and garlic in the olive oil and butter, until the onions caramelize.
  • 3) Transfer the onion mixture to a large bowl. Allow to cool slightly.
  • 4) Whisk ketchup, Worcestershire sauce, honey, and ginger in a medium bowl. Reserve 1/2 cup to glaze the tops of the loaves.
  • 5) In the large bowl, combine the remaining glaze mixture with the slightly cooled onion mixture. Add all other loaf ingredients. Mix.
  • 6) Divide mixture in half and transfer to two standard bread pans (10.75W x 6.5L).
  • 7) Spread remaining honey-ginger glaze on top of loaves and bake at least 1 hour (until center temperature registers 160 degrees).
