Ingredients

  • 2 Tbsp. olive oil
  • 2 onions, finely chopped
  • 4 cloves minced garlic
  • 2 large cans Italian tomatoes
  • 1 (6 oz.) can tomato paste
  • 1 tsp. basil
  • 1 tsp. oregano
  • Tabasco sauce to taste
  • 1 Tbsp. chopped fresh parsley
  • any leftover cooked vegetables, chopped, sliced, diced, etc.

Method

  • Saute onion and garlic in olive oil. Add tomatoes and break up with spoon. Add tomato paste, vegetables (raw ones first); anything goes, peppers, carrots, zucchini, mushrooms, corn, squash, broccoli, beans, etc.
  • Add spices.
  • Simmer about 45 minutes until vegetables are tender.
  • Stir in 1/4 cup Parmesan cheese if you like the sauce to be thicker.
  • Very low in calories and fat.
