Ingredients

  • 2 Tbsp. vegetable oil
  • 1 slice fresh ginger, peeled
  • 1 clove garlic, peeled and crushed
  • 1/2 c. sliced onion
  • 1 c. fresh broccoli flowerets
  • 1 c. sliced cauliflower
  • 1 c. red and green pepper strips
  • 1/2 tsp. salt
  • 1 pkg. (6 oz.) frozen pea pods
  • 1 c. sliced mushrooms

Method

  • Put oil, ginger and garlic into a 2-quart glass casserole. Cook, uncovered 2 minutes on High.
  • Add onion, broccoli, cauliflower and pepper to casserole, stir.
  • Cover with glass lid or plastic wrap.
  • Cook 3 to 4 minutes on High.
  • Sprinkle mixture with salt.
  • Add pea pods and mushrooms.
  • Stir.
  • Cook covered for 3 minutes on High.
  • Makes 8 servings.
