- 2 Tbsp. vegetable oil
- 1 slice fresh ginger, peeled
- 1 clove garlic, peeled and crushed
- 1/2 c. sliced onion
- 1 c. fresh broccoli flowerets
- 1 c. sliced cauliflower
- 1 c. red and green pepper strips
- 1/2 tsp. salt
- 1 pkg. (6 oz.) frozen pea pods
- 1 c. sliced mushrooms
Method
- Put oil, ginger and garlic into a 2-quart glass casserole. Cook, uncovered 2 minutes on High.
- Add onion, broccoli, cauliflower and pepper to casserole, stir.
- Cover with glass lid or plastic wrap.
- Cook 3 to 4 minutes on High.
- Sprinkle mixture with salt.
- Add pea pods and mushrooms.
- Stir.
- Cook covered for 3 minutes on High.
- Makes 8 servings.
