Ingredients
- 5 to 6 stalks celery, diced
- 3 carrots, diced
- 1 medium onion, chopped
- 1 parsnip, sliced
- 1 turnip, sliced
- 3 to 4 sprigs parsley, chopped
- 1 tsp. Italian seasoning
- 1/2 tsp. garlic salt
- 2 Tbsp. olive oil
- 1 qt. chicken broth
- 1/2 c. barley
Method
- Saute celery, carrots and onions in olive oil (about 5 minutes).
- Add parsley.
- Sprinkle with seasonings (Italian and garlic).
- Add parsnip and turnip.
- Saute lightly (about 3 minutes).
- Add broth and simmer until vegetables are tender (20 plus minutes).
- Add barley and cook until tender (about 10 minutes).
