Ingredients

  • 5 to 6 stalks celery, diced
  • 3 carrots, diced
  • 1 medium onion, chopped
  • 1 parsnip, sliced
  • 1 turnip, sliced
  • 3 to 4 sprigs parsley, chopped
  • 1 tsp. Italian seasoning
  • 1/2 tsp. garlic salt
  • 2 Tbsp. olive oil
  • 1 qt. chicken broth
  • 1/2 c. barley

Method

  • Saute celery, carrots and onions in olive oil (about 5 minutes).
  • Add parsley.
  • Sprinkle with seasonings (Italian and garlic).
  • Add parsnip and turnip.
  • Saute lightly (about 3 minutes).
  • Add broth and simmer until vegetables are tender (20 plus minutes).
  • Add barley and cook until tender (about 10 minutes).
