Ingredients
- 1 1/2 Tbsp. olive oil
- 4 boneless, skinned chicken breast halves (1 lb.)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. leaf thyme, crumbled
- 2 large sweet green peppers, cut and seeded
- 1 or 2 medium sized onions
- 3 Tbsp. balsamic vinegar
Method
- Heat 1/2 tablespoon oil in a large skillet over medium heat. Add chicken; saute until just cooked through, 3 to 4 minutes on each side.
- Transfer to platter.
- Sprinkle chicken with half the salt, pepper and thyme.
- Cover to keep warm.
