- 1 lb. raw shrimp
- 3 c. water
- 2 tsp. salt
- 2 Tbsp. margarine
- 1 clove garlic, minced
- 1 onion, chopped
- 1 green pepper, diced
- 2 c. canned tomatoes
- 2 c. sliced okra
- 1/4 tsp. pepper
- 1/2 tsp. basil leaves
- 1 tsp. sugar
- 2 Tbsp. chopped parsley
- 1 1/2 c. hot, cooked rice
Method
- Wash, peel, dice and devein shrimp, then refrigerate.
- Save shrimp shells and rinse in cold water.
- Combine shells, water and salt in kettle and simmer for 20 minutes.
