Ingredients
- 1/2 lb. vanilla wafers
- 1/2 c. butter (1/4 lb.)
- 1 1/2 c. powdered sugar
- 2 eggs
- chopped pecans
- 1 can crushed pineapple
- 1/2 pt. heavy cream, whipped
Method
- Crush vanilla wafers and line bottom of greased 9-inch baking dish, setting aside a small amount.
- Cream butter, sugar and eggs and pour this mixture over wafer crumbs.
- Sprinkle chopped pecans on top.
- Drain liquid from pineapple and place over nuts.
- Top with whipped cream and the remaining wafer crumbs as decoration. Chill at least 4 hours.
- Can be made 1 to 2 days ahead.
