Ingredients

  • 1/2 lb. vanilla wafers
  • 1/2 c. butter (1/4 lb.)
  • 1 1/2 c. powdered sugar
  • 2 eggs
  • chopped pecans
  • 1 can crushed pineapple
  • 1/2 pt. heavy cream, whipped

Method

  • Crush vanilla wafers and line bottom of greased 9-inch baking dish, setting aside a small amount.
  • Cream butter, sugar and eggs and pour this mixture over wafer crumbs.
  • Sprinkle chopped pecans on top.
  • Drain liquid from pineapple and place over nuts.
  • Top with whipped cream and the remaining wafer crumbs as decoration. Chill at least 4 hours.
  • Can be made 1 to 2 days ahead.
