- 1 cup green cabbage, thinly sliced
- 12 cup chopped red bell pepper
- 3 green onions, finely chopped
- 14 cup water
- 2 tablespoons minced parsley
- 1 teaspoon dried basil
- 1 cup whole wheat bread crumbs
- 14 cup roasted sunflower seeds
- 14 cup cooked brown rice
- 2 egg whites, beaten
- vegetable oil cooking spray
Method
- Coat a skillet with olive oil.
- Add cabbage, bell pepper and green onions; saute for 5 minutes.
- Add water a little at a time.
- Cook until all liquid evaporates.
- Remove from heat; stir in parsley and basil.
- In another bowl, combine bread crumbs, sunflower seeds and rice.
- Stir in egg whites.
- Add vegetable mixture.
- Drop batter by spoonfuls onto skillet sprayed with vegetable cooking spray and flatten to form burgers.
- Brown on both sides for 5 minutes.
