Ingredients

  • 1 cup green cabbage, thinly sliced
  • 12 cup chopped red bell pepper
  • 3 green onions, finely chopped
  • 14 cup water
  • 2 tablespoons minced parsley
  • 1 teaspoon dried basil
  • 1 cup whole wheat bread crumbs
  • 14 cup roasted sunflower seeds
  • 14 cup cooked brown rice
  • 2 egg whites, beaten
  • vegetable oil cooking spray

Method

  • Coat a skillet with olive oil.
  • Add cabbage, bell pepper and green onions; saute for 5 minutes.
  • Add water a little at a time.
  • Cook until all liquid evaporates.
  • Remove from heat; stir in parsley and basil.
  • In another bowl, combine bread crumbs, sunflower seeds and rice.
  • Stir in egg whites.
  • Add vegetable mixture.
  • Drop batter by spoonfuls onto skillet sprayed with vegetable cooking spray and flatten to form burgers.
  • Brown on both sides for 5 minutes.
