Ingredients

  • 2 whole Bell Peppers (your Preference - Green, Red Or Yellow; Seeded And Chopped)
  • 1/2 cups Carrots, Chopped
  • 1 whole Onion, Chopped
  • 1/2 cups Celery, Chopped
  • 1 cup Broccoli, Finely Chopped
  • 2 Tablespoons Butter
  • 1 cup Broth, Vegetable Or Chicken
  • 3/4 cups Medium Pearl Barley
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper

Method

  • First, clean and chop all of your veggies.
  • Melt butter in a large skillet and sautA veggies until tender (3-5 minutes). Stir in the broth, barley, salt & pepper and mix well.
  • Transfer to greased 9" square baking dish. Cover and bake at 350 F for 50 minutes. Remove cover and bake 5-10 minutes longer, until the liquid is absorbed and the barley is tender.
