Ingredients

  • 3 c. red cabbage
  • 1 c. carrots
  • 1/4 red or yellow peppers
  • 2 Tbsp. sliced onions
  • 2 Tbsp. golden raisins
  • 1/4 tsp. lemon juice
  • 1/4 tsp. pepper
  • 2 Tbsp. sliced celery
  • 2 tsp. oil
  • 3/4 tsp. sugar
  • 3/4 tsp. apple cider vinegar and honey

Method

  • In large glass or stainless bowl, combine finely shredded cabbage, carrots and peppers (matchstick pieces).
  • Add rest of ingredients.
  • Stir to combine.
  • Cover and refrigerate until flavors blend, 30 minutes or overnight.
  • Stir salad just before serving.
