Ingredients

  • 1/2 cups Pasta Of Choice
  • 1 Tablespoon Vegan Mayo
  • 1 teaspoon Lemon Juice
  • 1/2 teaspoons Italian Seasoning
  • 1 Tablespoon Diced Onions
  • 2 Mini Bell Peppers, Diced
  • 2 Tablespoons Diced Cucumbers
  • 1/4 cups Chickpeas
  • 1/2 teaspoons Basil
  • Salt And Pepper, to taste

Method

  • Boil pasta in a pot according to package instructions. Drain.
  • Add mayo, lemon juice, and seasoning to the pot and mix thoroughly. Add pasta back into pot and add veggies, chickpeas, and basil. Mix so that pasta, veggies, and chickpeas are coated in the dressing. Season to taste with salt and pepper.
  • Serve and enjoy!
