Ingredients

  • 4 slices Bacon
  • 1/2 cups Sugar
  • 1/4 teaspoons Salt (optional)
  • 1 Tablespoon Cornstarch
  • 1 whole Egg, Beaten
  • 1/4 cups Vinegar
  • 1 cup Water
  • Fresh Spinach Leaves, Dandelion Greens, Or Endive; Washed Drained And Chilled

Method

  • Fry bacon until crisp. Remove bacon strips to drain on paper towels; reserve bacon drippings.
  • In a small saucepan over medium to medium-low heat, combine sugar, salt and cornstarch.
  • Add beaten egg and vinegar; mix well.
  • Add water, crumbled bacon and reserved bacon drippings. Cook to desired thickness. (Extra sugar or vinegar may be added to taste).
  • Serve over greens. Makes 1-1/2 cups dressing.
