Ingredients
- 4 slices Bacon
- 1/2 cups Sugar
- 1/4 teaspoons Salt (optional)
- 1 Tablespoon Cornstarch
- 1 whole Egg, Beaten
- 1/4 cups Vinegar
- 1 cup Water
- Fresh Spinach Leaves, Dandelion Greens, Or Endive; Washed Drained And Chilled
Method
- Fry bacon until crisp. Remove bacon strips to drain on paper towels; reserve bacon drippings.
- In a small saucepan over medium to medium-low heat, combine sugar, salt and cornstarch.
- Add beaten egg and vinegar; mix well.
- Add water, crumbled bacon and reserved bacon drippings. Cook to desired thickness. (Extra sugar or vinegar may be added to taste).
- Serve over greens. Makes 1-1/2 cups dressing.
