Ingredients
- 1 cup dry red wine
- 1/4 cup apple cider
- 8 chopped pitted Medjool dates
- 1 tablespoon fresh lemon juice
- 2 cups vanilla light ice cream
Method
- Combine wine and cider in a small nonstick skillet over high heat; bring to a boil. Add dates; reduce heat to medium, and simmer 8 minutes or until slightly thickened. Transfer mixture to a bowl.
- Spoon 1/2 cup ice cream into each of 4 bowls. Top each serving with about 1/4 cup date mixture. Serve immediately.
