Ingredients

  • 1 18 cups unbleached flour
  • 14 cup unbleached cane sugar
  • 1 teaspoon baking powder
  • 1 egg, beaten
  • 12 cup flaked coconut
  • 12 teaspoon ground cinnamon
  • 14 teaspoon salt
  • 1 14 cups milk
  • cooking oil

Method

  • Combine flour, sugar and baking powder in a bowl.
  • Add remaining.
  • ingredients.
  • Stir lightly until smooth.
  • Pour 1/4 cup batter onto.
  • an oiled hot griddle or electric frying pan until puffy.
  • Flip.
  • pancake when bubbles are set.
  • Cook until lightly browned.
  • Serve.
  • with hot maple syrup or flavored butter.
  • Makes about 10 pancakes.
