Ingredients

  • 6 oz. chopped dates
  • 1/2 c. boiling water
  • 1 tsp. oleo
  • 1 egg
  • 1/4 c. sugar
  • 1/2 c. orange juice concentrate, thawed
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 2 1/2 oz. chopped walnuts

Method

  • Pour boiling water over dates. Stir until lukewarm.
  • Beat in by hand the oleo, egg, sugar and orange juice concentrate. Sift together dry ingredients, except nuts.
  • Fold dry ingredients into date mixture.
  • Add nuts and blend through.
  • Pour into a 9 x 5-inch loaf pan that has been sprayed with a nonstick spray and bake in a preheated 350° oven for 45 to 55 minutes or until toothpick inserted in loaf comes out clean. Cool in pan for 5 minutes. Turn out onto rack and cool completely.
