Ingredients
- 3 large baking potatoes
- 1/2 lb. Mozzarella cheese
- milk
- butter
Method
- Bake potatoes for 1 hour or until done.
- Let cool.
- Slice in half lengthwise and scoop out potato, leaving 1/4 in skin.
- Put potato in bowl; add Mozzarella cheese, milk and butter.
- Mix as for mashed potatoes.
- Refill potato skins; decorate with any of the following:
- chopped green or red pepper, chopped chives, shredded Cheddar cheese, chopped bacon, paprika, spices as desired.
- Before serving, bake at 325° for 20 minutes.
