Ingredients

  • 3 large baking potatoes
  • 1/2 lb. Mozzarella cheese
  • milk
  • butter

Method

  • Bake potatoes for 1 hour or until done.
  • Let cool.
  • Slice in half lengthwise and scoop out potato, leaving 1/4 in skin.
  • Put potato in bowl; add Mozzarella cheese, milk and butter.
  • Mix as for mashed potatoes.
  • Refill potato skins; decorate with any of the following:
  • chopped green or red pepper, chopped chives, shredded Cheddar cheese, chopped bacon, paprika, spices as desired.
  • Before serving, bake at 325° for 20 minutes.
