  • 3 medium size zucchini
  • 2 c. chicken broth
  • 1 tsp. olive oil
  • 2 Tbsp. scallions (including some of the green), chopped
  • 1 clove garlic, minced
  • 1/8 tsp. crushed red pepper seed
  • 1 lb. fresh ground turkey
  • 1 (14 oz.) can whole tomatoes
  • 1 (8 oz.) can no salt added tomato sauce
  • 3 Tbsp. dry red wine (optional) or water
  • 1/8 tsp. dry basil or parsley
  • 1/4 tsp. dry oregano
  • fresh ground black pepper to taste
  • fresh parsley, chopped (about 2 Tbsp.)
  • 1 c. loosely packed, low moisture, part-skim Mozzarella
  • 2 Tbsp. fat-reduced Parmesan cheese, grated
  • 1/2 c. soft bread crumbs *
