- 3 medium size zucchini
- 2 c. chicken broth
- 1 tsp. olive oil
- 2 Tbsp. scallions (including some of the green), chopped
- 1 clove garlic, minced
- 1/8 tsp. crushed red pepper seed
- 1 lb. fresh ground turkey
- 1 (14 oz.) can whole tomatoes
- 1 (8 oz.) can no salt added tomato sauce
- 3 Tbsp. dry red wine (optional) or water
- 1/8 tsp. dry basil or parsley
- 1/4 tsp. dry oregano
- fresh ground black pepper to taste
- fresh parsley, chopped (about 2 Tbsp.)
- 1 c. loosely packed, low moisture, part-skim Mozzarella
- 2 Tbsp. fat-reduced Parmesan cheese, grated
- 1/2 c. soft bread crumbs *
