Method
- Dry cavity; rub it with salt.
- Butter inside and out.
- Shake stuffing into the cavity.
- Never pack it in.
- Truss, tying legs together firmly, pulling wings up over the breast and tying all close to body.
- Rub butter into every pore of the bird that you may have missed, extra coating to the breast.
