- 1 medium onion, chopped (1/2 c.)
- 2 Tbsp. margarine
- 2 c. turkey broth
- 2 c. diced potatoes (3 medium)
- 1 c. diced celery (2 ribs)
- 1 c. diced carrots
- 1 c. cooked turkey pieces
- 1 c. cream-style corn
- 1 can evaporated milk
- 1 tsp. parsley flakes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. paprika
- 1/4 tsp. ginger (may omit)
Method
- In large saucepan, saute onion in margarine until tender.
- Add broth and bring to boil.
- Add potatoes, celery and carrots. Reduce heat; cover and simmer until vegetables are tender, about 15 minutes.
- Add remaining ingredients and heat through.
