Ingredients

  • 1 medium onion, chopped (1/2 c.)
  • 2 Tbsp. margarine
  • 2 c. turkey broth
  • 2 c. diced potatoes (3 medium)
  • 1 c. diced celery (2 ribs)
  • 1 c. diced carrots
  • 1 c. cooked turkey pieces
  • 1 c. cream-style corn
  • 1 can evaporated milk
  • 1 tsp. parsley flakes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika
  • 1/4 tsp. ginger (may omit)

Method

  • In large saucepan, saute onion in margarine until tender.
  • Add broth and bring to boil.
  • Add potatoes, celery and carrots. Reduce heat; cover and simmer until vegetables are tender, about 15 minutes.
  • Add remaining ingredients and heat through.
