Ingredients
- 1/2 None rotisserie chicken, cooled, chopped
- 1/2 cup mayonnaise
- 1 tsp lemon juice
- 3 stalks celery, trimmed, roughly chopped
- 1/3 cup fresh chives, roughly chopped
- 4 tbsp butter, softened
- 24 slices white and/or wheat bread
- 8 slices Cheddar cheese
Method
- Place chicken in a food processor and pulse until finely chopped. Add mayonnaise, lemon juice, celery and chives and process to combine. Season.
- Butter each slice of bread then place a slice of cheese on the buttered side of 8 slices. Top cheese with another slice of bread then spread chicken mixture evenly over top. Add remaining bread on top to make triple-decker sandwiches.
- Cut out sandwiches using a rabbit-shaped cookie cutter or a sharp knife.
