Ingredients
- 2 lb baby red potatoes, halved
- 2 tbsp olive oil
- 1 None large lemon, cut into 6 wedges
- 1 sprig fresh thyme, plus 2 tsp chopped to garnish
- 1 sprig fresh oregano, plus 2 tsp chopped to garnish
Method
- Preheat oven to 425°F. Toss potatoes with olive oil and lemon. Season. Place in a roasting pan along with herb sprigs. Roast for 20 mins, until tender. Sprinkle with fresh herbs to serve.
