Ingredients

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups old-fashioned oatmeal
  • 1 cup unsweetened coconut
  • 23 cup chocolate chips
  • 23 cup white chocolate chips
  • 23 cup butterscotch chips

Method

  • Preheat oven to 350 degrees F. Cover cookie sheets with parchment paper.
  • In a medium bowl, cream together butter, white sugar and brown sugar.
  • Beat in eggs one at a time, stir in vanilla.
  • Combine flour, baking soda, salt; stir into creamed mixture.
  • Mix in oats, coconut and chips.
  • Drop dough by large tablespoons (I use a small cookie scoop) onto prepared cookie sheets, 2 inches apart.
  • Bake cookies for 14 minutes in preheated oven.
  • Allow cookies to cool on baking sheet for a couple of minutes before removing to a wire rack to cool completely.
