Ingredients

  • 1/2 cup butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup packed light brown sugar
  • 1/3 cup toasted flax seed
  • 1 cup pecans, toasted and chopped
  • 1 cup soy grits
  • 1 cup toasted wheat germ
  • 2 cups shredded coconut
  • 6 cups rolled oats
  • 2 cups dried cranberries
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 2 oranges, zested
  • 2 egg whites

Method

  • In a large skillet, melt the butter over low heat.
  • Add the honey, vanilla, and brown sugar and stir the mixture until it is melted.
  • Turn off the heat and add the flax seed, pecans, grits, wheat germ, coconut, oats, cranberries, cinnamon, nutmeg, and orange zest.
  • Stir the mixture until the dry ingredients are completely covered.
  • Remove from the heat and cool to room temperature.
  • Preheat oven to 350 degrees F.
  • When the mixture is cool, add the egg whites and stir to combine.
  • Spread the mixture onto a baking sheet and bake until golden brown, about 15 minutes.
