- 1/2 cup butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup packed light brown sugar
- 1/3 cup toasted flax seed
- 1 cup pecans, toasted and chopped
- 1 cup soy grits
- 1 cup toasted wheat germ
- 2 cups shredded coconut
- 6 cups rolled oats
- 2 cups dried cranberries
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 2 oranges, zested
- 2 egg whites
Method
- In a large skillet, melt the butter over low heat.
- Add the honey, vanilla, and brown sugar and stir the mixture until it is melted.
- Turn off the heat and add the flax seed, pecans, grits, wheat germ, coconut, oats, cranberries, cinnamon, nutmeg, and orange zest.
- Stir the mixture until the dry ingredients are completely covered.
- Remove from the heat and cool to room temperature.
- Preheat oven to 350 degrees F.
- When the mixture is cool, add the egg whites and stir to combine.
- Spread the mixture onto a baking sheet and bake until golden brown, about 15 minutes.
