Ingredients
- 3 medium garlic cloves, crushed
- 1/4 teaspoon kosher salt
- 3 tablespoons mayonnaise
- 3 tablespoons grated Parmigiano-Reggiano cheese
- 1 teaspoon freshly squeezed lemon juice
- Freshly ground black pepper
Method
- Place the crushed garlic cloves on a cutting board and sprinkle with the salt.
- Drag the side of a chefs knife across them at a 15-degree angle about 10 times or until a smooth paste forms.
- In a medium nonreactive bowl, combine the paste with the mayonnaise, Parmigiano-Reggiano, lemon juice, and pepper to taste and stir until well mixed.
