Ingredients

  • 3 medium garlic cloves, crushed
  • 1/4 teaspoon kosher salt
  • 3 tablespoons mayonnaise
  • 3 tablespoons grated Parmigiano-Reggiano cheese
  • 1 teaspoon freshly squeezed lemon juice
  • Freshly ground black pepper

Method

  • Place the crushed garlic cloves on a cutting board and sprinkle with the salt.
  • Drag the side of a chefs knife across them at a 15-degree angle about 10 times or until a smooth paste forms.
  • In a medium nonreactive bowl, combine the paste with the mayonnaise, Parmigiano-Reggiano, lemon juice, and pepper to taste and stir until well mixed.
