Ingredients
- 1 9-inch unbaked pastry shell
- 1 16-oz. can pumpkin, about 2 c.
- 1 14-oz. can sweetened condensed milk
- 2 eggs
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Method
- Preheat oven to 425°.
- In large mixer bowl, combine all ingredients and mix well.
- Pour into pastry shell and bake 15 minutes.
- Reduce heat to 350° and bake 35-40 minutes longer, or until center tests done; cool.
- Garnish with whipped cream and refrigerate any leftovers.
