Ingredients

  • 8 oz jarred mincemeat
  • 2 tbsp brandy
  • 15 tbsp butter, softened
  • 1 tsp vanilla extract
  • 1 cup firmly packed brown sugar
  • 2 None eggs
  • 1 cup all-purpose flour, sifted
  • 1/2 cup self-rising flour, sifted
  • 2/3 cup ground almonds
  • 3 oz white chocolate chips
  • 1 cup sliced almonds, lightly toasted
  • None None powdered sugar, to dust

Method

  • Preheat oven to 350°F. Grease and line an 8 inch square cake pan with parchment paper. Combine mincemeat and brandy in a small bowl. Set aside.
  • Cream butter, vanilla and sugar until pale. Add eggs, 1 at a time, beating until combined. Fold in flour and almonds until combined. Fold in mincemeat, chocolate chips and 1/2 cup almonds. Transfer to prepared pan and sprinkle with remaining almonds. Bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool in pan.
  • Cut into squares and dust with powdered sugar to serve.
