Ingredients

  • 2 None refrigerated pie crusts
  • 1 1/4 cups heavy cream
  • 3 None eggs
  • 1 1/2 cups crumbled feta cheese
  • 7 oz smoked salmon slices, cut into thin strips
  • 1/2 cup frozen peas, thawed
  • 2 tbsp finely chopped dill

Method

  • Preheat the oven to 400°F. Lightly grease a 6-cup Texas muffin pan.
  • Cut pie crusts into six 4 1/2 inch-squares. Press a pastry square into each muffin cup, trimming edges. Line each crust with parchment paper and fill with dried beans, rice or pie weights. Bake 8-10 mins. Remove paper and weights. Cool crusts slightly.
  • Whisk cream and eggs in a medium bowl. Season to taste.
  • Divide feta, salmon, peas and dill evenly among crusts. Pour egg mixture over each to fill.
  • Reduce oven temperature to 300°F. Bake quiches 15-20 mins, until just set.
