Ingredients
- 2 None refrigerated pie crusts
- 1 1/4 cups heavy cream
- 3 None eggs
- 1 1/2 cups crumbled feta cheese
- 7 oz smoked salmon slices, cut into thin strips
- 1/2 cup frozen peas, thawed
- 2 tbsp finely chopped dill
Method
- Preheat the oven to 400°F. Lightly grease a 6-cup Texas muffin pan.
- Cut pie crusts into six 4 1/2 inch-squares. Press a pastry square into each muffin cup, trimming edges. Line each crust with parchment paper and fill with dried beans, rice or pie weights. Bake 8-10 mins. Remove paper and weights. Cool crusts slightly.
- Whisk cream and eggs in a medium bowl. Season to taste.
- Divide feta, salmon, peas and dill evenly among crusts. Pour egg mixture over each to fill.
- Reduce oven temperature to 300°F. Bake quiches 15-20 mins, until just set.
